Randy Bennett is the DJ of the Month for December 2011.  Randy’s clients always love him and he is a true team player for Joe Bunn DJ Company.

This is what the Poleys said about their December 3rd wedding. “Randy did a fabulous job at our wedding!! We’ve both been to a lot of weddings and our parents had all these concerns about the DJ so Randy unknowingly had a lot of unfair expectations put on him; nonetheless he knocked it out of the park.  Music selection, volume and master of ceremony duties were all handled excellently.  We would highly recommend Randy to anyone (wedding or otherwise).  Thank you very much Randy–we couldn’t be more pleased.

Recipe of the Month-Hurry Up Chicken Pot Pie

We are are striving to be a little more “green” going into 2012, so instead of mailing out the recipe cards some of you used to get, we are putting the recipe in our monthly newsletter. This one is so simple, even Joe can make it!

Ingredients

  • 2 cups chopped cooked chicken breast
  • 2 hard-boiled eggs, sliced
  • 1/2 cup thinly sliced carrots
  • 1/2 cup frozen green peas
  • 1 (10 3/4-ounce) can cream of chicken soup
  • 1 cup chicken broth
  • Salt and pepper, optional
  • 1 1/2 cups instant biscuit mix
  • 1 cup milk
  • 1 stick melted butter

Directions

Preheat oven to 350 degrees F.

In a greased 2-quart casserole, layer the chicken, eggs, carrots, and peas. Mix the soup, chicken broth, and season with salt and pepper, if desired. Pour over the layers. Stir together the biscuit mix and milk, and pour this over the casserole. Drizzle butter over the topping. Bake until the topping is golden brown, 30 to 40 minutes.
